The Parramatta line only stops there on maps because it is the most
southerly limit of the possible route choices. In other words, the line
might join the Shore at Chatswood or at St Leonards (or somewhere in
between), but not any further south.

Remember that one of the basic principles of the new line is that it
will transfer traffic from areas which allegedly have insufficient
capacity (i.e. areas between roughly Redfern and Granville) to areas
which have spare capacity at least in the counter-peak direction (i.e.
the North Shore). Much of this benefit would be lost if people had to
change trains at a place like Chatswood or St Leonards in order to get
into the city.
