Overland is BL class. BL 27 and 33 alternate. The train runs each way
on Sun, Mon, Tue, Thr, Fri. 
The Ghan is run by single NR class. Not sure about the Sydney but the
loco that works the Ghan out of Adelaide to Alice Springs on Mondays
then works right through from ASP to Melbourne where it is changed for
a new loco for the return trip.
