You cannot really blame modern day people for these things, but you could
place a lot of blame on early imperialism (ie., Britain, Spain, Portugal,
France), because they are the ones who turned most third world countries
into cash crop wastelands instead of food producing lands (where's the
profit in that?  The West has enough food and the thrid world can't pay for
it, so lets make coffee :-)).

I have no idea about third world countries stuffing their own land up, but I
know Northern China destroyed a lot of its land a few centuries ago, mainly
because of the population requiring the land to be reworked over and over
without cycling.
