The Yerong Hotel at Yerong Creek has a nice view of the 160km/h track.
The King's Own at The Rock was built on the old Westby line and the
Uranquinty both have reasonable views although somwhat obsured. I
think you can get meals at the King's Own; not sure about the other
two.

Don't forget the Shirley Hotel at Bethungra. It has a good view of the
tracks and is close to the spiral.
