I think the area was named after the Sunshine Combine Harvester Company
(or something like that). Sorry about a serious lack of detail here
(this is dating back to some of my Year 11 studies, that was about 7
years ago), but I understand that the the above company established a
'greenfields' site for their factory in what is now Sunshine. In doing
so, it also established housing and amenities for it's workforce, hence
naming the 'suburb' Sunshine.

Unfortunatly I don't have the textbook anymore, though perhaps I've
jogged someone's memory who can give us a more accurate account of
events!
