I just read a newspaper report that people who do night shifts are more
prone to heart attacks and diabetes. Apparently the blood glucose level
rises in the body during the night and when you eat at night especially
starchy foods (especially unrefined carbohydrates) this causes even
higher blood glucose levels which eventually wears down the pancreas as
it has to pump out extra insulin.

Maybe the company health departments should issue guidelines on what
foods night shift workers should eat, e.g. less carbohydrates, more
meat and greens.
